Salmon, cherry tomatoes & baby potatoes all get roasted in one pot together making this a very easy dish. To up the vegetable intake serve this with some green beans which only take a couple of minutes to cook in boiling water. Salmon can be quite expensive so I would consider this dish to be dinner party worthy maybe spruced up a little with some sliced black olives. For everyday cooking try this when salmon is on special offer or substitute any other meaty fish.
You will need (for 4):
4 Salmon darnes
1kg baby potatoes
2 tbsp olive oil
1 punnet cherry tomatoes (on vine if possible)
1 tbsp balsamic vinegar
small bunch basil
green beans (optional)
lemon & sour cream to serve
Method:
Pre-heat the oven to 220C.
Cut the potatoes in half (skins on) and toss in a large roasting pan / dish with 1 tbsp of olive oil.
Put the potatoes on to roast for 20-25 minutes.
Toss the potatoes and then add the salmon darnes and tomatoes to the pot.
Drizzle 1 tbsp olive oil over the salmon and tomatoes and drizzle 1 tbsp balsamic vinegar only over the tomatoes.
Cook for a further 10 -15 minutes.
Meanwhile boil the green beans for 2-3 minutes if using.
Scatter over the basil leaves before serving.
Serve with wedges of lemon and a dollop of sour cream.

I have never been successful with salmon except when it is on the grill. This looks too tempting to pass up though!
