Corn and Cauliflower Fritters with Red Onion Raita

Hooray, it’s Friday and being in the mood for a glass of wine tonight and something of the takeaway persuasion, I’m going to whip up some more of these simple fritters and lounge in front of the TV for the evening.  The fritters are based on a recipe from ‘a year at Avoca’ and are listed under the Autumn section but will suffice I’m sure for a chilly spring evening too.  As there was only a forlorn stubby piece of cucumber lingering in my fridge, the Raita has taken on a slightly red hue with the addition of a grated red onion which lends some flavour too in the absence of mint.  As usual my recipe differs from the original, me being a bit more heavy-handed on the chilli and including shallots instead of spring onions which were not in the supermarket today.

Corn and Cauliflower Fritters.
You will need:
1 small tin of sweetcorn
1 small or half large head of cauliflower
150g plain flour
1 tsp ground cumin
1 tsp ground coriander
Qtr tsp turmeric
1 garlic clove
1 red chilli
2 large shallots
1 tbsp fresh coriander
3 eggs
Sunflower oil
Method:
Cut the cauliflower into smaller than bitesize florets discarding the hard core and stalky bits.
Boil the cauliflower florets until tender and drain well.
Drain the sweetcorn.
Deseed and finely chop the chilli.
Peel and finely chop the shallots.
Peel and crush the garlic.
Finely chop the fresh coriander.
Combine the chilli, shallots, garlic, fresh coriander with the flour, cumin, ground coriander and turmeric in a large bowl and mix well with a fork.
Whisk the three eggs in a separate bowl and then mix into the flour and spices to form a batter.
Stir in the sweetcorn and cauliflower.
Heat some sunflower oil in a large frying pan and spoon large dollops of the fritter mixture onto the pan. You will probably get five or six on at a time.
Drain the fritters on kitchen towel to soak away some of the sunflower oil.
Serve with a side salad and mango chutney or red onion raita.
Red Onion Raita
You will need:

Qtr cucumber
1 small red onion
Low fat natural yoghurt
Method:
Peel and finely dice the cucumber
Peel and grate the red onion
Combine with the yoghurt and serve. (Great with finely chopped mint if you have it)
Enjoy.

  1. Wow, Sheila! These look gorgeous! I love raita too so thanks for the recipe for that as well. Definitely going to be giving these little guys a go. Yum!
