We live in Ballincollig, Cork, Ireland and I work with my husband Denis in our Food Safety Consultancy business (Industrial Management Systems) and we have six  grown up children.

My first recipe book ‘Gimme the Recipe’ which is a collection of my favourite tried and tested everyday recipes was published in March 2012 with Mercier Press and my second recipe book ‘Enjoy!’ is jam-packed with all the food I love.  I am not a trained chef, I am a regular busy working mother doing a constant juggling act.

These recipes are for everybody, if I can do it, you can too.

  3. Hi Sheila, I too am a mother of six, 24, 23, 20, 19, 14 and 10.
    Older ones away during term time, but all at home for holidays! I find big batch cooking helps a lot, and frozen in individual portions, then no matter who comes or goes (student accommodation!) they all have ‘home-cooked’ meals, and even Hubby knows how to use the microwave!!

  4. Hi Sheila, my lovely friend (and your cousin-in-law) Joanne passed me details of your blog and I just had to write to tell you how much I love it. Every single recipe looks delicious and sounds mouth watering – i’m hoping to find time to test a few out one day soon. As a working mum with a toddler and another one on the way, I am in awe that you find the time to write a blog what with six busy offspring.
    I met you at Joanne’s wedding and couldn’t get over your boundless energy – must be all that delicious food. Had to tell you that your blog is just fabulous and makes me pine for a trip to Ireland. Thank you for all the dinner party inspiration and kids lunch box tips. Keep ’em coming!

Great start to my day 🙂 As my kids are well beyond the toddler phase now (yougest boys are 9) it’s a lot easier to find time now than when they were smallies (& I’ve also developed very selective hearing over the years!)   5. Hello Sheila!
    I check out your blog at least once a week to see what’s cooking (and baking). Your bagels looks delicious. Growing up in Brooklyn, we had bagels every week on Sunday. As you know, the key to a great bagel is the water and New York water seemed perfect for bagels. I’d love to try a Cork bagel! Keep up the great work.

  10. Got your book last week & absolutely love it! Have made 6 or 7 of your recipes to date and each of the was a success… I love the fact that I have pretty much all the ingredients needed in my kitchen already or can substitute something I have for an ingredient I am missing. The recipes are practical, quick and delicious. As a first time mum who is heading back to work soon I think your book will be invaluable. Best cookery book I have bought in a long time (and I love cookery books!)

This is a book that I feel really passionate about as it writtern primarily for myself and people like me who love food and love recipe books yet don’t have the luxury of time to seek out obscrue ingredients. Every recipe was made using ingredients from my local supermarket and I’m a great believer in substitution. Delighted that you’ve tried so many recipes already and wish you all the best with your return to work. 🙂 Sheila
