We live in Ballincollig, Cork, Ireland and I like to write about food and travel when I can. I work with my husband Denis in our Food Safety Consultancy business (Industrial Management Systems) and we have six children aged 22, 21, 20, 20, 17 & 17.
Yes, there are two sets of identical twins and my life is very busy!
As there are 8 mouths to feed – most days – I have a practical approach to cooking. The kids are sporty and with the ferrying around that involves combined with working full-time, I don’t have a lot of time to prepare weekday meals. For day to day cooking everything has to be readily sourced and not off the richter scale in terms of pricing so I usually shop in my local supermarket.
With the kids growing up we’re starting to get away and travel more so I’ve been writing a lot more about that lately.
My first recipe book ‘Gimme the Recipe’ which is a collection of my favourite tried and tested everyday recipes was published in March 2012 with Mercier Press and my second recipe book ‘Enjoy!’ is jam-packed with all the food I love. I am not a trained chef, I am a regular busy working mother doing a constant juggling act.
These recipes are for everybody, if I can do it, you can too.
