What’s the Cheese?

A nice creamy Irish Brie, not a French salty one. An Irish buffalo mozzarella. An extra mature Irish cheddar with almost detectable salt crystals. Also partial to a youthful Durrus and give me one of those from Gubbeen but not the smoked lads. How about that soft goats cheese with cranberry, I haven’t seen that for a while. Then there’s Templegall, yum.

If your day doesn’t include some good Irish cheese then what are you at. Go get some. Grate it, melt it, slice it. Love it up with some relish or pickled onion. Eat the cheese, people, eat the cheese.
