Fish Supper

I went in search of cod yesterday and came home with hake.  The cod wasn’t out yet and when I pointed at the good looking fish at the back of the display the butcher identified it as hake and told me that he preferred it to cod as it’s a softer fish. It’s a grand big fish that cooks to a tender and delicate bite.

Even though it’s spring and a nice leafy side dish would be more healthy we had this with baked potatoes and peas.
This recipe is based on one from BBC Good Food.
Serves 4:
You will need:
1 onion
1 tbsp olive oil
400g tin chopped tomatoes
1 tsp light brown sugar
1 tbsp soy sauce
4 pieces of hake
few sprigs thyme
Method:
Peel and finely chop the onion.  Heat the oil and gently cook the onion for 5 minutes in a deep frying pan or casserole pot.
Strip the thyme leaves from the sprigs.
Add the sugar, soy sauce, thyme leaves and tomatoes to the onion.  Bring to the boil, then reduce to simmer for 5 minutes.
Push the fish pieces into the tomato sauce and cover the pot.  Cook gently for 8 to 10 minutes.
