Guacamole

Now that BBQ season is well underway it’s time to start whipping up a few tasty side dishes.  Guacamole is a super accompaniment to steak, burgers, chicken or just served with tortilla chips and a beer.  It takes 5 minutes to make and I would class it as a health food.

You will need:
2 ripe avocados
1 small red onion
1 lime
handful coriander
optional – 1 red or green chilli
Method:
Slice the avocado in half, remove the stone and scoop out the flesh with a spoon.  Use a knife to roughly chop the avocado.  Peel and finely chop the red onion.  Rinse and roughly chop the coriander.  Half and then juice the lime (you are only using the juice).  Deseed and finely chop the chilli if using.  Using a fork or a potato masher combine all the ingredients for a chunky guacamole (if you prefer it smooth use a food processor).  Enjoy.
