Apple & Blueberry Loaf Cake

This time last week I was preparing for my talk at Savour Kilkenny Foodcamp and didn’t get to post a recipe so I’m making up for that this week with a second baking recipe.  Wonderfully moist and full of fruit, my girls had this apple & blueberry loaf cake for breakfast this morning.  Like a muffin but in the form of a cake this cuts really well and oozes comfort.

You Will Need:
250g self raising flour
75g unsalted butter
125g caster sugar
2 eggs
2 medium cooking apples
125g blueberries
Method:
Heat oven to 180C, Gas Mark 4.
Grease a loaf tin and line the base with parchment paper.
Cream the butter with the caster sugar.
Prepare the apples by coring, peeling and chopping into smallish pieces.
Beat the eggs and flour into the butter and sugar alternating between egg and flour until all added.
Add in the apples and the blueberries and mix to coat the fruit with the cake mixture.
Pour the mixture into the loaf tin and bake for 40-45 minutes.
Test with a skewer and if it comes away clean the cake is cooked.
Enjoy.

With the end of October in sight this is the last of the baking recipes for a while.  During November I’ll be posting some party food and some girls night in one pots for easy entertaining.
