As a reward for my younger sister encouraging her friends to ‘like’ the gimmetherecipe facebook page I promised that I would explore a healthy yet yummy cookie that involved chocolate and nuts. These turned out with more of the texture of a flapjack than a cookie and are definitely aimed at the nut lovers out there.
You Will Need:
100g wholemeal flour
qtr tsp bread soda (sodium bicarbonate)
qtr tsp baking powder
125g unsalted butter
200g soft brown sugar
1 egg
1 tsp almond extract (or vanilla)
75g mixed nuts (hazelnuts, almonds, pecans, walnuts, brazil nuts)
175g porridge oats
100g dark chocolate
Method
Preheat the oven to 180C and line three baking trays with parchment paper
Chop the chocolate into chunks.
Place the nuts in a small plastic bag and bash with a rolling pin.
Use an electric mixer to soften the butter. Add the sugar and mix together.
Add the egg and extract and mix well.
Mix the flour, bread soda and baking powder together in a bowl.
Use a wooden spoon to add the flour mix to the butter mix then add in the nuts, oats and chocolate and mix well.
Spoon large dollops of cookie dough onto the trays and shape them.
Space the cookies out well as they will spread a lot.
Bake for 10 minutes.
Leave the cookies to cool on the baking trays for 5 minutes. They will be soft at first but will harden when cool.
Transfer to a wire rack to cool completely.
