There’s nothing like the sound of the neighbour’s lawnmower to get you in the mood for a Bar-B-Q. If they’re cutting the grass then it’s dry enough to get out in the garden with a couple of cold beers and something sizzling on the BBQ. A couple of side dishes are called for to go with your steak. Guacamole, perhaps a mozzarella and tomato salad and how about some of this Spicy Slaw?
It’s a recipe from Simon Rimmer taken from the ‘Something for the Weekend’ section of June’s BBC GoodFood magazine. It is spicy and sweet and so good that I made some extra dressing for drizzling over cold chicken in sandwiches etc.
You will need:
1 small white cabbage
1 red onion
3 medium carrots
1 red chilli
1 tbsp wholegrain mustard
1 tbsp sweet chilli sauce
125ml mayonnaise
juice 1 lime
Method:
Shred or grate the cabbage, red onion and carrots into a bowl.
Deseed and finely chop the red chilli and mix with the wholegrain mustard, sweet chilli sauce, mayonnaise and lime juice in a jug.
Pour the dressing over the shredded vegetables and mix well.
