A badly needed eatery has just opened in Ballincollig {outside Cork city} and it is excellent.

I’ve sampled the antipasto….

It’s good value & child friendly and while we were there a number of people were just popping in for takeout coffees.

Service is great, very attentive and friendly and I’m looking forward to a return visit and maybe even to sit outside.

The Potato Year & The Farmer’s Table

So ‘The Potato Year’ is a collection of 300 classic recipes by Lucy Madden.  Did you know that you could do so many things with the humble spud?

When you pick up a book, any book it has a certain feel and this one is just lovely.  In hardback it has a textured almost waxed finish to the cover and wouldn’t go amiss amidst a collection of Bronte novels.  Without any pictures it has more of a feel of a much-loved novel than a cookbook and there’s plenty of narrative going on here too, even the recipe method is written more in paragraph format than streamlined instruction. In the words of Susan Jane White who wrote the Foreword ‘It looks set to become a classic.’  The plethora of recipes are organised by month and as I write in the month of May would you care for a Potato Moussaka, Pommes a la Basque, La Truffado, Empanadas, Gooseberry and Potato Cobbler, Potato Salad with Black Olives and Thyme as they feature among the 26 recipes listed for the month, one almost per day!

One of my favourite things to do with a potato is to bake it, a quick scrub and then bunged with skin on into a hot oven to cook away independently from 50-60 minutes depending on the size and the efficiency of your oven.  Split open and topped with melting Irish butter and some salt and pepper what could be simpler.  Lucy Madden features a number of baked potato recipes one of which is Foil-Baked Chilli Potatoes and with barbeque season almost upon is this may be one you would like to try:

With baked potatoes in mind I’d been on the look out for ‘The Farmer’s Table’ baked potatoes as a friend of mine had asked me if I’d tried them. On my travels I came across them in Lynch’s Centra Crosshaven and then spotted them again this week in my local Quish’s SuperValu Ballincollig.

Baked potatoes take time to cook but with these frozen beauties you have the option of using the microwave to have them on the table in minutes.

I tried one from the oven and one from the microwave and found that the oven baked was that bit crisper and dryer whereas the microwaved one was more moist.  Seeing that I was topping them with a knob of butter to melt on top I enjoyed both equally as did my assistant testers!

There are a number of filling options and I went for the ‘Bacon & Cabbage Colcannon Baked Potatoes.’  A good hearty filling of bacon, cabbage and mustard flavoured creamy sauce these are priced at 4.99 so that’s both of you fed for a fiver though you may want to supplement with some vegetables or salad.  Listing ingredients you can read and recognise that’s always a good sign for a convenience meal.

With three exam kids in the house this year these will be a great ‘I’m starving’ standby to have in the freezer and one that I’ll be enjoying on those I couldn’t be bothered to cook myself days too.

Carrot & Sesame Seed Salad

It’s almost upon us, warmer weather and the season of salads and outside eating.  When’s it going to come though?  There’s been promises for days of higher temperatures but my phone is telling me that we’re not going to rise about 15C anytime soon.  I’ve started making the switch already though and most meals are being accompanied by some type of salad.  I just can’t wait to be able to take my plate outside and enjoy it under a blue sky embalmed with a wafting warm air.

Here’s an easy carrot and sesame seed salad and it’s even easier if you’ve a food processor with a grater attachment.

You will need:
5 medium carrots
2 small white onions
1 tbsp honey
1 tbsp white wine vinegar
2 tbsp sesame seeds
Method:
Peel and grate the carrots and onions.
Mix the honey and white wine vinegar together and stir through the  grated carrots and onions.
Dry fry the sesame seeds until turning golden and sprinkle on top of the salad.
Enjoy.

Roast Cauliflower & Shallots

Roast cauliflower and shallot featureVegetables can be a pain in the ass to prepare and sometimes you’re just not in form for all that chop, chop, chopping & pernickity peeling.  This delicious dish would be great as a vegetarian main bulked up with some spinach leaves and with a good crumbling of feta it would be amazing.

You will need:

1 head cauliflower
8-10 shallots
2 cloves garlic
2 tbsp rapeseed or olive oil
2 tsp caraway seeds
2 tsp cumin seeds
100g pinenuts
good handful fresh parsley
Method:
Pre-heat the fan oven to 180C.
Break/cut the cauliflower into florets.
Peel and quarter the shallots.
Crush two cloves of garlic.
Toss the cauliflower and shallots with the garlic, 1 tbsp of oil, 2 tsp caraway seeds and 2 tsp ground cumin in a large baking dish/pan.
Roast for 30 minutes in the heated fan oven.
Add the pinenuts, 1 tbsp oil and mix around, cook again for a further 10 minutes.
Serve with a good garnish of fresh parsley.

Chocolate Chip, Cranberry & Peanut Butter Loaf Cake

Choc Chip Loaf Cake 1January was one long month, I just couldn’t get to the end of it quickly enough.  The endless confetti of plastic windowed envelopes gliding in through my letter box on a chilly breeze; there was no mistaking these as straggling greeting cards, these were bills! Reminders of the excesses of the holiday period.  You’ll be more prepared next year though won’t you?  You’ll save a bit so you will.  Won’t we all!  Meanwhile hollow pledges aren’t going to stall the direct debits so it’s time for a stocktake of your freezer and cupboards.  What on earth is lurking in there and what indeed is it waiting for?  I know I’ve some frozen pastry sheets for just-in-case visitor moments so I’m going to pull those out and fill them for supper one of these fine evenings.

In the meanwhile a little bit of comfort.  I hadn’t baked for ages and there’s nothing like the smell particularly when it’s so rare.  The dried cranberries plump up really sweetly in a buttery cake and keeping the chocolate chunks nice and big make a slice of this a welcome wintery weather treat.

Chocolate Chip, Cranberry & Peanut Butter Loaf Cake
You will need:
150g butter
5 tbsp crunch peanut butter
175g brown sugar
250g plain flour
1 tsp baking powder
2 eggs
200g good quality chocolate (2 bars, I go for >75%)
60g dried cranberries
Method:
Grease a loaf tin with butter and line the base with a strip of baking paper.
Pre-heat the fan oven to 180C
Beat the butter and brown sugar together
Beat in one egg followed by half the flour and baking powder
Beat in the remaining egg and flour
Stir in the crunchy peanut butter, dried cranberries and the chocolate cut into large chunks
Bake for 40 to 45 minutes until nicely browned on the outside
Leave to cool for 10 minutes before removing from the tin, allow to cool further on a wire tray.
